Buttermilk Biscuits

Ingredients

  • 2 cups flour
  • 1.5 tablespoons baking powder
  • 1 stick salted butter (frozen)
  • 2 tablespoons sugar
  • 1/4 teaspoon salt
  • 3/4 cups buttermilk

Instructions

  • Preheat oven to 425F.
  • Combine flour, baking powder, sugar and salt in large bowl.
  • Take frozen butter and grate on a box cutter.
  • Cut butter into flour mixture and combine with your hands until butter pieces resemble the size of a pea.
  • Slowly start to incorporate buttermilk into mixture and combine ingredients in a large bowl, just until everything comes together.
  • Place dough on heavily floured surface and knead 4 times.
  • Once dough is 1 inch thick, use a 2.5 inch biscuit cutter and cut 6 biscuits.
  • Spray cast iron skillet with cooking spray and arrange biscuits.
  • Bake biscuits for 15 minutes.
  • Pull biscuits out of oven, brush with melted butter and sprinkle with salt (optional).
  • Place biscuits back into oven and adjust setting to broil.
  • Continuously rotate biscuits for 3-4 minutes until golden brown.
Be careful to not over knead the dough as biscuits will become dense
Ensure you are using fresh baking power, otherwise biscuits will have a tough time rising.
