Vegetable Lasagna Rollups

Ingredients:

  • 12 ounces frozen spinach, thawed and drained
  • 1 zucchini, chopped
  • 1/2 cup Parmesan cheese, grated
  • 2.5 cups cottage cheese
  • 2 cups tomato sauce
  • 10 lasagna noodles, cooked according to package instructions
  • 1 egg, lightly beaten
  • 1.5 cups mozzarella cheese, shredded

Instructions:

  • Preheat your oven to 350°F (°C) and lightly grease a baking dish and ladle one cup of tomato sauce covering the bottom of the dish completely.
  • In a mixing bowl, combine the thawed and drained spinach, chopped zucchini, cottage cheese, Parmesan cheese, and egg. Mix well until evenly combined.
  • Lay out the cooked lasagna noodles on a cutting board. Spread the spinach and cottage cheese mixture evenly over each noodle, leaving a small border around the edges.
  • Starting from one end, carefully roll up each lasagna noodle, creating a neat roll. Place each roll seam-side down in the greased baking dish.
  • Pour the remaining tomato sauce over the lasagna roll-ups, ensuring they are evenly coated.
  • Sprinkle the shredded mozzarella cheese over the top of the roll-ups, covering them completely.
  • Cover the baking dish with foil and bake in the preheated oven for about 30 minutes.
  • After 30 minutes, remove the foil and continue baking for an additional 10-15 minutes, or until the cheese is golden and bubbly.
  • Once done, remove the baking dish from the oven and allow the lasagna roll-ups to cool for a few minutes before serving.
